This traditional food from Betawi is known as porridge with hereditary recipes so that not everyone can make it. It looks just like ordinary rice porridge. However, Bubur Ase is also equipped with tetelan (meat fat), potatoes, tofu, then doused with soy sauce. This sauce is called "ase." The enjoyment of bubur ase is complemented by a sprinkling of anchovies and pickles on top. As a result, this porridge is increasingly rich in taste.
